November at Relais Villa L'Olmo is an experience in itself... We speak of Extra-Virgin Olive-Oil, of how good the one produced in Tuscany is and this is the time to see it actually being made... from the tree to the bottle!
The production of extra-virgin olive-oil at Villa L'Olmo is a traditional activity that dates back to the first half of the XVIII century and it's the result of an attentive selection of the best olives of the crop, which are of 3 different qualities: moraiolo, frantoio and pendolino. The olives are traditionally picked by hand (as done in the past), using little rakes, ladders and huge nets places on the ground. They are collected and crushed in the olive press at Villa l'Olmo estate on the same day. They are washed and separated from their leaves before being crushed under the ancient millstones that allow a laminating pressing process. The olive-oil is then extracted using hydraulic presses and a centrifuge without any temperature alteration. This process is called "cold pressed method".
The olive harvest sarted and Fattoria Villa L'Olmo opened its traditional stone-wheel oil-mill that works 24 hours a day for the entire month of November, this makes it a very special and exciting period of the year for us all...
Daily visits will be organized for the Relais Guests between 5 and 6 pm and will be followed by wine- and olive-oil-tastings.
